Nothing is better than a bowl of hot soup on a winter day, but it does take a little time and effort to prepare one from scratch in a time crunch. I like to take a day during the week to make soup and freeze it in portions that I can heat up when my time is limited. Some tools that help me in this process are some relatively easy recipes that I can prepare ahead and kitchen helpers such as the Souper Cube that I use to store it in the freezer.
One of my favorite cookbooks is The Looney Spoons Collection, by Janet & Greta Podleski. The recipes are healthy and the cartoons that accompany them are really funny! One of my favorites is Super-Corney Crab Chowder. When I make a pot of it ,I pour it into the one cup portions in the Souper Cube and freeze for later. The Souper Cubes came in a set of two so I can freeze eight one cup portions and the flexibility of the cube trays make them easy to release into a pan for heating up at a later date.
